Wouldn't the alcohol melt the ice cream regardless of fire? Alcohol has a much lower freezing point than water (ever keep a bottle of vodka in the freezer?)
See, it's sort of a conflicting thing. If the alcohol is chilled to well below the freezing point of water, it won't melt the ice cream on contact, but it won't flambe very well either. If the alcohol is hot when it hits the ice cream, it will flambe very well but it will also melt the ice cream. I think it would be best to use the alcohol at about 0 deg F, what your freezer should be. Chilled plates are also not a bad idea for this application.
I wonder if I would break the 0 deg F plates if I flamed 0 deg F alcohol on it.
