I tried to get our turkey cook to spatchcock it. No dice. 🙁
If possible you definitely need to try it next year. Once you go spatchcock it's hard to prepare a turkey any other way. We purchased a new LG gas range this year and it turned out exceptional. Not sure if the convection bake oven made the difference or what but it tasted better than when we had an electric range.

Here it is after being tented with tin foil for around 20 minutes. My bother in law was getting ready to carve it up.

That turkey looks fabulous! I didn't spatchcock ours. Since I also smoked a brisket, I decided to stay with the central Texas theme and smoked the turkey with just salt and pepper and finished it with butter. Can't go wrong with salt and pepper and both the smoked brisket and turkey were great.
