Happy Thanksgiving everyone. Just put the turkey on the smoker and will be eating in 6 hours. Low and slow to begin and then a higher heat around 325° for the last hour and a half so it isn't dry. Am not using my good smoker since it is at the summer house and i was moving this fall and figured the less I had, the cheaper it would be with the movers.
Picked up an ECB the other day. A little disappointed to see they changed the design for the worse. Around $15 worth of modifications and it is functioning well. I'll use this thing through the winter and then into the trash it goes.
