I bought a third of a cow from a friend of mine. It included about 75 pounds of hamburger. I like making hamburgers and caseroles/hot dishes from it, but I don't have much for recipes and don't know many people that do. Does anyone have any recipes or ideas for cooking it that they would like to share or recommend?

 
uhh.. you bought 1/3 of a cow? how gross.

anyway. when i used to eat meat, my mom would make "hamburger upside-down pie".. it was kind of odd but i liked it a lot. i dont know the recipe offhand, but im pretty sure it was basically hamburger cooked with barbeque sauce in a pan (sloppy joe?).. and then poured into a glass/ceramic/something dish, covered with cornbread batter... and then cooked in the oven.
 
My usual hamburger patty recipe:

Ground beef
1 Egg
Garlic Salt
BBQ Sauce
Diced Green Peppers
Minced Onions

Good ground meat ideas:
Meat balls
Bolognese pasta sauce (meat sauce)
Meatloaf
Shepherd's Pie (hamburger, brown gravy, veggies, top with mashed potatoes)
Texas Hot Weiners (sautee beef in beef builion and some ketchup. put on top of hot dogs with chopped onion and mustard).
Salisbury Steaks
Patty Melts
Chili con carne
Tacos
steak tartare 😀
Ranch burgers (add cheese and ranch powder to beef patties and grill them)

I make almost all these with ground turkey or "ground meatless" but they are traditionally made with ground beef.
 
Buy 1 of each of the 48 different hamburger helper flavors and you are set for a while.

actually im just mostly vegetarian 😉 but i actually gave you an idea at least!!!
 
super easy Spanish Rice:

1 pkg Lipton Spanish Rice mix
1 lb ground beef
1 can diced tomatoes w/ green chilis
few dashes of fav. hot sauce

brown beef, add all ingredients plus one extra can (use tomato can) of water, cover & let simmer according to rice mix package.
 
You can easily make tasty hamburger patties by mixing in some onion soup mix. Bear Creek Onion (I get it at Costco) or Lipton Beefy Onion Soup mix work well. :beer:

edit: xchangx beat me to it! There are lots of different spices you can try using in your burger patties: Lawry's Seasoning, Granulated Garlic or Onion, Worcestershire Sauce/Powder, black pepper, Spike Seasoning, dried basil, etc. 🙂

I have a large standup freezer. 22c/ft I believe. It fills about half the freezer.
 
1lb ground beef browned and seasoned.
2 cans of Cream of chicken or 2 cans of cream of mushroom, or 1 can of each
1 can water
1 can mushrooms
1 onion, diced

simmer on stove

serve over rice.

Thats what big ice chests are for. We can easily fit half a cow and a pig in our garage ice chest. The only time its been FULL was when my dad brought home an elk. Had to give meat away to our family.
