Sometimes technology really is great. I am in the hammock in my back yard, with a cold one, cooking strip steaks over real charcoal. Having grilled veggies and basmati rice too :D

Who has basmati rice with steaks?... thats like blasphemy... you need roti with some Dal... LOL

Oooh, I need to bbq some chicken breasts tonight. Any ideas for a good marinade/sauce/etc?

(I only have a gas grill, though. :eek:)

Mmm, just got done with my steak & 'tatos...how was yours?

Great!

I sliced some zucchini and put them in a zip lock bag. Added some italian dressing and grilled the slices. Came out pretty good I think.

I'm guessing they're skinless (haven't gone shopping yet).

I suggest skin-on breasts. They will better hold the spice and the fat under the skin protects the meat. Since it cooks off, it doesnt add much in the way of fat or calories but improves the result quite a lot.

I can suggest a tomato based sauce, or a fave of mine which is a sauce of melted butter, salt and cider vinegar. You sprinkle it on the chicken as it cooks, and you wind up with a nicely spiced moist piece of chicken. The skin blackens a bit, but that adds to the flavor.

Jamaican chicken maybe.

I have a recipe for a tomato and molasses based sauce..

All depends on what you have a hankerin for.

I'm probably too late, but I love Emeril's Rosemary Garlic marinade on chicken breast.

We are having the same - but with corn on the cobb and swordfish as well.

Nah, not too late at all. I'll probably end up bbq'ing in about four hours (I slept in REALLy late today!).

Got something....

Chicken with bone

Marinade...
1.5 cups dry sherry
one cup chopped onion
1/4 cup lemon juice
6 minced garlic cloves
2 bay leaves
Mix and put in large baggie w/ chicken and refrigerate for 2 to 4 hours..

The sauce..
You are going to reuse the marinade, but since it's a cooked sauce, it's ok

the sauce
15 oz can tomato puree
the marinade
1/4 cup honey
3 tablespoonfuls molasses
1 tsp salt
1/2 tsp crushed thyme
1/4-1/2 ground black pepper
2 tablespoonfuls vinegar
You put everything in a sauce pan except the vinegar and reduce over heat to two cups
Takes about half and hour
stir in the vinegar and remove the bay leaves
Grill those puppies bone side down
Then they are almost done, sauce them
I usually cook them half way and sauce twice
till done
