I was ready to get an Intel DH67CLB3 $109 with an i5-2500 3.3ghz cpu when I decided that my photoshop rendering and HD video editing would go a bit smoother with an inexpensive graphics card:

Sapphire 100293DP Radeon HD 5570 1gb - $55 AR

Now I'm questioning my decision to go with an H chipset even though I'll not be overclocking and do no gaming.

H chipset is fine for your useage....no gaming and no o/clocking= h chipset....
with H you have the option of onboard graphics or dedicated video card..your choise is fine...you can sleep well now...
