I'm going next Wednesday, who's with me that lives in the area? I am all for this, I get a discount and eat in the safest gumbo shop in the DC/Metro area :p (at least on Wednesdays.

While I'm happy that you guys can have your gumbo and gun party (I love gumbo!), as a fun aside my gut tells me that if you examine this statistically it almost certainly makes the gumbo joint less safe.

You would have to analyze the probability of a violent crime that was preventable by a citizen gun owner occurring at that gumbo place vs. the probability of an accidental discharge of a firearm of course, but I know that my money would be on an accidental discharge being far more likely than a gun preventable crime happening during your dinner.

Be safe and have fun!

They have Gumbo that far north?

I'm partial to Seafood Gumbo. Best I've ever had was in a small place in a working class section of Galveston.

Don't know if they allow guns. But most of Galveston is pretty laissez-faire anyway.

Well hello Mr Fancy Pants. Down here in the South we don't eat that kind of fancy French named crap! ... I actually have no idea what Étouffée is.
Make a roux, let it get some color, cook vegetables, add meat/spices, throw a lid on it, and let it braise on the stovetop for a little while. IoW, if you take a roux-based gumbo recipe, and change it into a gravy or thick stew, instead of a soup, you'll basically have an etouffee.

It kind of originated way in the South, too, as part of the mish-mash of native, French, and African cultures.
