Guitar players: how do you finger Am/G?

It depends on the context. Some chord changes work better with the thumb, some work better with the pinky. Every time you see that chord practice it both ways to see what is easier or sounds better.

It also depends on whether you are doing melody lines and need the pinky somewhere else. Or if you are doing bass runs and are using your thumb for other bass notes on the 'E' string and 'walk' into it.

A lot of people don't use the thumb to fret notes at all. Usually if they have small hands.

I can't finger the G comfortably when I'm doing the Am chord. Will keep trying. The song is while my guitar gently weeps

Practice is what turns what is uncomfortable into second nature.
