these things rock

for some roasts, they are just too thick for marinates to take... you just pop some sauce in it, and plunge the sucker until the meat is nice and high, er, flavored

punching holes in meat is never a good idea; it will make it dry

basting means opening the oven door will cool the oven and that will make it take longer to cook, which will make it dry

if you want moist meat, brine it (one part salt 3 parts liquid like water or OJ) for one to 12 hours
