Fine.

I think the best guacamole is really and obviously all depend on (gasp) having the ripest avocado.

1. Pick the ripest avocados.
2. Crush them into oblivion
3. Squeeze fresh lemon or lime juice to prevent browning
4. Add a splash of tobasco
5. rape.

One of the reasons CA is the best state is that I've got both an avocado tree and a lemon tree in my yard. ;)

my family's: two avocados, two Cubanelle peppers, two seranno, one habanero, 3 cloves of garlic, salt and pepper to taste.
mix all ingredients in the food processor to desired thickness.

I like to keep my avocados chunky in the recipe, not too smooth...I keep it simple - finely minced sweet onions, salt, pepper, lime juice, cilantro and maybe a kick of a hot pepper depending on how I feel.

2 avocados
2 non-salmonella laced roma tomatoes (de-seeded)
1 sweet onion
1 garlic clove
2 hot jalapeno peppers
1 tablespoon cumin
Big pinch of salt

I pulse the onion, garlic, peppers and tomatos a few seconds on the food processor and then drop in the rest. Give it a few good chops with the processor and drop it in a dish and squeeze some lime juice and give it a stir.

smash 1-2 avacadoes.
mix w/ salsa or picante sauce of your choice.

that's all you gotta do.
