I'm a bit interested in what offers the best minimums. I've seen someone post that the 570 and 580s get better minimums than the 6970s, but I haven't really seen any reviews where this shows clearly. Do you know?

I use to have a pair of 5870s running UT3. I switched them out for a GTX 480 I was saving for Adobe Premiere Pro CS5 and the game runs much much better, almost night and day difference.
 
At 1900x1200 I don't think the extra VRAM of the Radeon cards will come into play, which makes the 570 SLI a better option. Superior tesselation, better minimum framerates, PhysX, great overclockability. It's a win-win-win-win. 🙂
