GTX -> GTX Ultra...can it be done?

You might be able to hit the same core speed, but dont forget the Ultra has faster shader clock. You'd have to edit the BIOS and raise the shaqder clock to truly meet the Ultra speed. In any case, I doubt you'd be able to get the memory high enough.

I can easliy hit the core clock on my GTX, but have never been able to get the memory speed.

On the 8800GTS, when you raise the core clock, the shader clock goes up as well. I'm not sure if this is the case with the 8800GTX, but it probably is.

Yes it applies to all GeForce 8 Series products.
In specific GPU Core frequency increments, the Shader Domain rises by 54MHz at each "sweet spot"

GPU & Shader Domain freqs are reachable for every single GTX, the thing is with the memory ( not that it affects performance that much ) that you can't match it, and that's because the 8800GTX uses Samsung BJ1A chips ( 1.0ns - GDDR3-1800 ) while the Ultra uses the latest chips, Samsung BJ08 ( 0.8ns - GDDR3-2500 )
