what if i want to make my own ground chuck.. do i look for a piece of chuck or something?

i haven't seen it.


anyway, i only by flank steak... don't consume much beef... more into chicken and pork.
 
The fat percentage is not exactly an indicator of quality.
Personally, I think 85% is the ideal amount.
As you add more or less fat, the over all quality gets worse.
The cut of meat in the ground meat is what matters.
I therefore prefer ground Chuck.
