Grilling a salmon fillet...

How are you plannnig to grill it? Foreman, charcoal, gas, or what?

If you're putting it on an open flame grill, I'd leave the skin on (and oil it well, else you'll leave most of your fish on the grill 🙂). If it's a Foreman grill, I usually skin it and put a smidge of butter on.

If you try to remove the skin from the fish after it's cooked, the flesh will flake off and you'll end up with a pile of salmon flakes. It'll look like canned salmon.

Whatever floats your boat, but the skin carries most of the flavor. Not to mention the presentation is much nicer on a nice crispy piece of skin with grill marks. 🙂

Depends on how it's cooked. Had a nice piece of crispy-skinned salmon at Guastavinos the other day and the skin was delicious. I don't eat the skin from grilled salmon though. But that's where lots of the fat/oils are...between the flesh and skin. I wouldn't just throw that goodness away. 🙂
 
My preference: Grill w/skin on.

Both Salmon steaks and filets can be grilled either way. Just depends on your preference and type of recipe your're using.

Flakey meat is a sign is it's done.

Google knows Salmon.
 
IMO A crispy salmon skin is the best part of the salmon when grilling. Don't let the omega-3 fatty acids go to waste!
 
Leave the skin on when grilling and grill the skin side first. I serve it with the skin on and then those that eat it can, and those that don't can remove it. And I suggest you rub it with olive oil prior to grilling so it doesn't stick.
 
top it with a garlic lime aioli and bake til the aioli starts to brown. gives it an awesome zing! or a spicy corn relish.... oooo, no... both!
