Skin on or off? I'm just going to give it a light spice rub (fennel, cumin, coriander, pepper) and that's it.

skin on always.
Don't do this. You will mangle the fish.Originally posted by: MacBaine
Leave the skin on, then remove when it's done.

If you try to remove the skin from the fish after it's cooked, the flesh will flake off and you'll end up with a pile of salmon flakes. It'll look like canned salmon.Originally posted by: Excelsior

Cook it with the skin on, skin side first and leave it on after it's done.
Why the hell do you remove the skin after cooking?Originally posted by: Excelsior

Whatever floats your boat, but the skin carries most of the flavor. Not to mention the presentation is much nicer on a nice crispy piece of skin with grill marks. 🙂Originally posted by: Excelsior

Depends on how it's cooked. Had a nice piece of crispy-skinned salmon at Guastavinos the other day and the skin was delicious. I don't eat the skin from grilled salmon though. But that's where lots of the fat/oils are...between the flesh and skin. I wouldn't just throw that goodness away. 🙂Originally posted by: MacBaine
