I would think time will tell as to the popularity and success of UEFI now that it's out there. Seems like a step in the right direction. I like the drag-and-drop for changing the boot order. If you're asking about the overclocking aspects I don't know much about it but it should at least be more convenient, seeing how most tweaking is done in the BIOS from what I know.
Personally I'm stepping back from SB until it's out awhile. I just built a new 1156 machine last May; a few months earlier after release there were lots of issues with bad sockets and other bugs that eventually got worked out as they were in use through manufacturing changes and BIOS updates.
