Get a strip steak, liberally season both sides with salt and fresh ground black pepper. Get a cast iron skillet (NOT non stick) nice and hot. A little oil to the pan and place the steak in. DO NOT TOUCH THE STEAK UNTIL READY TO TURN IT. That gives you that nice crust. Flip, and don't touch it till done.

Serve it up.
