No idea on GB, but Tom's Hardware reports that like the nforce 1, the nforce 2, has both 64bit and 128 bit memory controllers, supporting both dual and single channel dimm operations.
I beleive it is a "True" dedicated dual channel chipset. Dual channel DDR on the Nforce is aimed differently for it's intergrated functionility than the chipset for Granite Bay and e7500. It's similar to HeSL or i840/50/60. If the Second Module isn't found in the slot, then it won't boot.
