They're both technically correct, saying different things.

I appreciate that you are taking the time...
I appreciate your (possessive) taking the time...

The first is probably a more standard use of English.

This is the correct answer.

I probably would have said "I appreciate your assistance..." ;)

According to my grammar books, "I really appreciate your taking the time..." fits the traditional grammar rule of using possessive pronouns to describe gerunds (taking.) It eliminates the confusion that has already been shown in this thread between whether I appreciate YOU or YOUR TIME.

Depends on how it is worded. The way you have it I would go with you, but if you word it like this" Thanks for taking time out of your day to look for any available positions".
