What program can I use to monitor GPU temps while gaming, what I want is a program that I can start before I start a game and them when I exit it will give me a graph or at least, min, max and average temps

it depends on which card it is.. if its ati u can use ati tray tools or CCC gives u temp readings also. ati tray tools give u max min current

Not really!
ATITool works on ATI cards as well as NVIDIA cards.

Well the new nvidia drivers with the new control panel can monitor the temps in the background dont think they do max/min/average.
Just use rthdribl if u want to find the max temp ur card gets to, havent seen any game stress gpu more than that prog.
