I can cook them in an oven which is ok but I want to try something different

I have canola oil, olive oil

Which oil should I use to fry my French Fries?

I usually use peanut or corn oil. Those two oils smoke point is too low, and your fries will taste horrible as the oil breaks up as you cook in it.

Out of the oils listed... I'd go with the Canola Oil for frying fries.

My favorite oil for the deep frier, so far, is Peanut Oil.

canola would be better, you don't need to deep fry, just get a skillet and fill about 1/4 inch or so. make sure the oil gets hot before you put any fries in, and don't put too many in at once or the temp will drop too far. don't let the oil smoke.

olive oil has too strong a taste and can't get hot enough for real deep frying.

deep fry is not healthy in the first place 😛

if you do it right hardly any oil gets absorbed into the food. see the good eats episode on fried chicken.
