Why would you want to go to all of that trouble to make a dedicated retro system and then play the games as if you where using dosbox/gog/steam?
Even if you use a widescreen LCD monitor, personally I would play the old games in pillarbox otherwise what's the point, I can play anything old I want on my windows 11 system with widescreen patches and all the comforts of a modern system.

Also most games will have issues with widescreen because the UI wasn't designed for it even if the main game would play well enough.
