Got a new smoker

Got me a new smoker, its outside seasoning today. Being a newb, any ideas for a relatively foolproof first meal?

Beer can chicken?

Ribs?

Pulled pork?


So far, this is looking really good, along with some of the home-made cole slaw they have on the same site.

Ribs are a good choice. I like to smoke for about 2 hours, then wrap in foil and go to the oven to finish. I used to get all exotic with dry rubs, but now I just do salt, pepper and a little bit of brown sugar and paprika.

A few general tips -

be sure your fire is going good before you cover it and start the smoke.

Avoid the temptation to open up the smoker and take a peak.

Smoked brisket is always good, but a good sized brisket can take up to 45mins per pound to cook. I generally don't cook anything smaller then 8-10lbs because they shrink a lot.
