Question Google Nest Wifi Router setup

I have purchased 2 Google Wifi routers (not router+AP) to use in my network.
I plan on setting up as follow:
FIOS ONT -> Google Wifi Router -------> 8 Port switch (Closet with FIOS/Google wifi router) -----------> 5 port switch (Bedroom)----------> Google Wifi Router (Bedroom)
Should I be wiring ethernet to the 2nd Google Wifi router after establishing Mesh network with the 1st Google Wifi Router (backhaul)? Would this create conflict with 2 routers being in the network? I heard that if I disable dhcp on one of the google wifi, it would disable the mesh.

What would be the ideal setup?
I do have another 5 port switches in living room and bedrooms and few routers that I can use with 2 google wifi.
My initial setup was FIOS -----> Quantum Router -----> 5 port switches -------> Google Wifi router (bedroom) ========meshed to 2nd Google Wifi router (not wired) in the living room
