I received an email from someone I don't know, requesting access to some files I keep in my Google Drive. My question is how can this individual know what files I keep there?

someone phishing for files possibly. My suggestion is to not keep files on the cloud.
 
Realistically:
* You
* Anyone you share with
* Google server administrators (With relevant server access)
* Google database administrators (With relevant database access)

Then anyone with illegal access to:
* Your PC/Account
* Your network activity
* Google servers
* Google databases
