We're looking to buy a house for my parents to retire in. Can anyone recommend any good resources to learn about what factors to look for in terms of buying a house that will likely appreciate in the future? Maybe there are some websites that provide good info on different areas so that we can make a data-driven decision?

seek out young, yuppie neighborhoods with a crack neighborhood a mere block or two away. Buy in the crack neighborhood.

It's all about location. Just look for very desirable areas with limited land for growth. Pay through the nose for a crappy house then cash in when mom and dad pass away.

Just taking a step back, does it really make sense for your parents to be in a home for retirement? Are they going to be doing the upkeep (inside and out, do they enjoy it and are they able)?

Avoid the state with a declining population, as all those vacant houses are going to hurt property values.

More direct answers are:

Atlanta & Dallas.

Chinese and Indian nationals are buying them all up for investment. A big boom in ATL anticipated.

You can view home values by zip code to see how they've trended over the past 33 years. This was one thing we looked at when we picked our current home. It made us feel more comfortable when everyone was waiting for the market to crash instead of buying, and so far so good as far as growth in value. You can also find projected changes in value by zipcode on zillow or redfin if you trust them.
