Good place to eat in Vegas that is one of a kind?

Making our list of things to do, places to go when we go back out there next month. I'm trying to find a good place to eat that only in Vegas and not a chain restaurant. Any suggestions?

I WOULD NOT suggest going to Emeril's in MGM. I thought i would go to a signature restaurant from one of the biggest celebrity chef in the world, and the food was just above average (for a very high premium price). Although the utensils they give you to use are pretty classy.

Canters Deli is a great place to get huge sandwiches! yummy! i think it's inside one of the casino's.

I liked Wolfgang Puck's Trattoria del Lupo in Mandalay Bay, but oddly enough my favorite place to eat there was at the Gameworks arcade near the MGM Grand. :confused: My wife and I ate there 3 times on our trip.

Emeril is actually a garden gnome brought to life with black magic, why anyone would eat anything associated with him is beyond me.

The buffet in the RIO.... mmmmmmm so good. Its expensive for a buffet, but its worth it!!

These are chains, but not that big: Hash House A Go Go, Memphis BBQ, Rio's buffets (both of them)

canters in Treasure Island was awesome cheap food

we had a GREAT meal at Bobby Flay's Mesa Grill in Caesars

Pink Taco is a chain, albeit a small one.

My wife said she wanted some real Mexican food when we were in Vegas. So, we drove the rental car to the worst part of town (not too bad, considering we're from Detroit) and found a restaurant. The waitress only spoke a little english, but the food was great. I don't know if I could find it again.
