good cheese for quiche?

Eggs are on sale 3 doz/$1 so I'm thinking of all the egg dishes I can make.

Eggs is cheap, but cheese is expensive, so I don't want to mess up. What's the best cheese for quiche?

I believe the cheese my mom uses when she makes quiche is either cheddar or monterey jack.
