Going to Los Angeles; need some tips/help/ideas!!!

I am looking to go to Los Angeles from 5/15-5/20 as a surprise for my girlfriend. I need two round-trip tickets, 1 hotel room, and a rental car. Also a few things she will really be looking to do while we are there is go horseback riding, take a dance class, go to disneyland, and take a surf lesson. If anyone lives there, or visits there often, I would really appreciate some help finding a good deal on all this stuff, where I might be able to find it, or any tips in general that might help make my vacation in L.A. a little better. No Saturday stayover may hurt you on the airfare. Priceline is the best way, imo, if you don't care which airline, hotel, rental car company.
