From my experience, the prices weren't that great. Sure you can get knockoffs and cheap stuff, but a hot deal in the states kills any deal you can find over there.
Clothes on the other hand, go nuts. Sales all the time, when are you going? Shoes... ehh... maybe. Custom tailored suits definitely, go to Guangzhou for them, or spend more in HK if you want.

computers/electronics is not that good to get overseas. even if its a bit cheaper, you don't get the warranty (as the serial number is most likely coded for the asian region) unless you can find 'american-imported' items for cheap (things that are made for USA but not shipped physically here, yes they are made in china but you probably get the US warranty) i doubt you would find good deals anyway, if you even encounter such items.
however you bet your arse i will get cheaper gadgets like Nintendo DS card readers, maybe some cool USB gadgets, cheap USB2 enclosures, cheaper things like that which wont break the bank nor will i cry over them if broken.
ditto the previous poster on clothes and food, and other daily items. i plan on making a trip back to HK in March (i was born there). I will surely haul a whole case of hair gel, underwear, a few suits, dress shirts and pants (G2000 ones are the best... wrinkle free and great prices to boot), and eat like a pig.
don't bother going to high end stores or malls for brands you see in america, you're not getting a good deal. same for restaurants, don't eat at higher end touristy restaurants, go for your normal beat up cafes you see around the corners (where they have set lunches for like $20-$30, equal to USD$3-4)
depending on which months you go back, it may get cold at night in December-February, although the weather is similar to that in Florida, it does get cold at night and they lack heating systems. but most hotels and shops are heated. no need for a down jacket but you should plan on bringing a fleece or some sort of jacket that can keep warm.
don't bother with their disneyland unless you get a really good deal, a friend of mine went back and said it was a waste of money.
I haven't been to china much (only been to Guangzhou a few times... everything is a lot cheaper, but i don't like it personally), so i can't help you there.
