i'm worried it'll be too windy for my brisket. damn tropical storm brings us nothing good.

by the time i get up to lubbock from houston those should be about done, right?

You guys suck... All we are having is Bacon/Bleu Cheese BABS. (Big Ass Burgers). They are pretty awesome stuffed with bleu cheese, but they sure aren't brisket/ribs/pulled pork....

😉

Damn those are some good looking pork shoulders. Wish I could get meat like that around here. I always do butt roasts (all we have at the store).

butt = shoulder.

same cut, so I'm sure you are doing the same damn thing, heh.

and fwiw, just go to Safeway or Costco and get the cheapest pplb that you can find.

For all the premium markets that we have around here, with prices up to $6/lb for butt/shoulder, I just go to Safeway or Costco (usually $2.30 or $1.99/lb) because that's all that really matters once you put it through the rigors or brining/rub/smoke and--if you're doing it properly--apple vinegar + magic spices sauce. yum

I've tried the various qualities, and it really makes no difference to me. The only thing, though, is that Costco sells them boneless; so that could be an easy turn-off.
