You'll be going really slow, so you won't really need goggles, but they can't hurt because they stick to your face and prevent glare. (I recommend amber colored lenses)
Get a helmet. If you catch an edge while learning to turn, you can fall backwards and slam your head on ice if the slopes have any icy spots....
Other than that...pad your knees and your backend as much as possible, but stick to wearing padded snowboard pants if possible. They should be made out of thick, but light material. I prefer Black-Dot as a namebrand. They usually have some decent equipment for cheaper than the names like Burton, etc...
Don't worry about your snowboard, boots, or bindings. When you go to rent, they'll hook you up with what you need. Just remember to pace yourself....and get wrist guards if you have a tendency to put your hands in front of you when you're falling forward.... With snowboarding, you're better off learning to roll and take the fall without putting your hands out. Broken wrists are common injuries.
If it's really cold out....like 2 degrees and blowing snow in your face at 30mph, you should look like this.
