Going crazy - need to remove stuff from a PDF document

Am I completely insane, or is there no way to remove images and/or text from a Pdf document using Adobe Acrobat Professional (not the Reader)? If not, is there any software that will let me edit PDFs or at least yank out stuff from them?

Adobe Photoshop will work, but is rather expensive if you don't already own it. If you just want to get the images and you want them quickly, you could always just take a snapshot of your desktop with prnt scrn key and paste that into mspaint and crop whatever you want out of that. You should be able to highlight and copy text in Acrobat Professional and the Reader editions by default.

That would work, but I need to keep it as a PDF, so doing the image capture and clipping/removal wouldn't work.. I'm looking for a program to edit the PDF and retain everything else in the document...
