A few days ago I had to get my battery jumped so I'm thinking it's probably just be the computer resetting itself. But, assuming it's not how serious is this on a scale of whatever to FIX NOW. I almost always manually turn my ESC off when I drive.
You need to FULLY charge your battery. Put an actual battery charger on the battery, obviously it was severely drained. A lot of cars will start having all sorts of idiot lights pop up if the battery has insufficient charge. A battery can have sufficient charge to crank the engine and run the car but insufficient to have the car run optimally/properly with all the electronics happy. You can take the battery out of the car and bring it to an autoparts store and have them charge the battery for you if you don't want to buy a battery charger. They should be able to charge the battery for you, free of charge.
That's a pretty common error light for GM and generally has nothing to do with the ESC.
If you have a OBD2 scanner just reset the code and see if it returns. Don't you need to turn your TC off to get your ESC off? Not sure that is the best way to drive. I only turn off my TC in heavy snow and never the ESC.
