Given the astronomical price of RAM

I'm putting together a new system. Since I am not a major game player I don't really care about DX10 cards so building now isn't a big deal, except for RAM prices. What is the consenus of the board:
1. Bit the bullet and spend ~$300 for good quality 2X1G ram
2. Be cheap and get lower cost(~$200) 2X1G ram and take your chances
3. Go for 2X512 RAM now and add 2X1G when the prices are more reasonable for a total of 3G. What are the potential pitfalls of this?
4. Similar to 3 but buy only 1 stick of 1G (won't be in dual channel mode then right?)

1) bite the bullit and get a good set of 667 ram that will oc up to 800 or above

I haven't bought RAM for a couple of years, but just this last week I bought two 1GB DIMMs and two 1GB SODIMMs, both top quality. The price seemed fair enough, ???
