Since I stumbled upon Elton Brown's magical steak cooking ways using a cast iron skillet, I've been cooking steak quite frequently.

However I am still looking for a great steak sauce that you make yourself. I understand you use the cast iron skillet after you cook the steak to make the sauce.

What is a good recipe?

If I was looking for steak sauce, I'd stick with A1. Somehow, getting any kind of sauce from a beast just doesn't sound appetizing...

Sweat some onions. This is just leaving them on low heat for around 30-40 mins. They should not burn, if they do then your heat is too high. If the heat is right, they'll get soft and turn yellowish and become nice and sweet. Basically what you might get from a restraunt. Make sure you use some butter and oil, but not too much. You can do the same with mushrooms, possibly put some worchestershire sauce on them at the end. That's good eats 😉

a light pan sauce doesnt ruin a steak, should you decide to sear it, instead of grill it.

i dont use a recipe, usually, i just use whatever is on hand. if i have mushrooms, shallots, onions, whatever looks good goes in the pan after i deglaze with either wine or stock or something else.

so, pan sear/fry steak >
deglaze with stock, broth, cider, wine, juice, brew, whatever you want, though try something with flavor as opposed to just water >
saute some veggies (onions, shallots, carrots, peppers, mushrooms, whatever you like, or have) >
season with salt, pepper, maybe some time, oregano, chile flakes, something something >
and then finish it off with just a little cream or buttah, maybe a grey or spicy mustard to thicken a bit. >
pour over steak.

delicious. same goes for chicken and pork dishes (chicken marsala...chicken florentine, etc)

you dont need a recipe, if you understand the basics. like i said, i use whatever is handy. a little chicken stock with some sauteed onions can make a good steak into a great steak, but ill have minep lain over using a bottled sauce *any day*.

try it, just once.

it might take a full 6 minutes. maybe 8 if your dawdle or cut whatever veggies you want too thick.

prepend "lay foil over steak to keep it warm" to the beginning.

i like how people think steaks are some kind of holy dont stop and think that chefs who spend their entire lives cooking will enjoy goo steaks with and without sauces. i wouldnt expect you to try it with something grilled (indeed, a grilled steak by itself is a great thing)

but get a so-so cut if you like, maybe just to try it out. put just a little oil on both sides, with some salt and pepper. heat up a skillet (nothing non-stick) and throw it in.

leave it alone. you know those grill marks people are wild about? this does that....but to the *entire* steak. thats right, the entire piece will be covered in a brown, crusty deliciousness. just give it a couple of minutes, flip it, but for gods sake dont push it around. hell, try it with some cheap flank steak, its still good eatin' .

heres one, he uses a strip steak, ive done one this way and loved it. dont want to use a strip? try something else, if you prefer. Strip Steak with a Pepper Cream Sauce

 
Oh, I'm hip. My German grandma used to whip up pan fried meat all the time. Sauce & all, as quick as I could open a bag of chips.

Not much into cooking myself, but even a strip steak would go on the grill around here. Hell, even burgers are the same in my book. Only meat I cook in a pan, is ground beef for chili or spaghetti sauce.

ill give you burgers....i keep forgetting to fix my grill, and avoid burgers on the stove.

they desire fire, they do.
