Give me a good chicken marinade.

First, grilling? Broiling? what part of the chicken? What are you eating with it?

Edit: in the mean time, I have found that yes, Italian dressing is a good all around marinade, but... I have found the best thing for grilled chicken breasts is a mixture of Mayo (full fat) garlic, onion power and paprika.
It sound disgusting, but the mayo really keeps it tender and when you are grilling, it all burns off leaving nothing but expectionally juicy chicken to an otherwise dry piece of poultry. You could also try buttermilk in place of mayo.

If you want to do more of a mediterranian recipe, use olive oil, balsamic vinegar, orange juice, few springs of rosemary and garlic.

For asian, simply soy sauce, olive oil a dash of seasme seeds, ginger hot mustard and lemon juice.

My hubby and I usually go for italian dressing if we have 12 hrs to marinade or the 30 min herb and garlic lowry's if we have less time. Of course both of those are for grilling.

I'm not a big fan of Italian Dressing on chicken.

My favorites are Emril's Rosemary Gaaarlic and I like all the Jamaican Jerk marinades you can buy like Lowry's, but I usually top them off some Jamaican Jerk seasoning just before I broil/grill.

Some regular BBQ sauce is OK too.

Stubbs chicken marinade

unfortunately uses high fructose corn syrup but if u dont mind having some ehre and there, very good stuff.

I see you live in the northeast. Have you had Speedie Sauce? (sp?)

I think it's pushed for beef marinades, but I like it better on chicken.

4 or 5 dried poblano (ancho)/anaheim peppers, rough chop in a food processor
4 or 5 cloves of garlic, chopped pretty fine
juice of 3 limes
peanut oil

mix first three ingredients and then add oil until it gets a bit gloppy. stuff under the chicken skin (take the back out of the chicken so you get the skin all on one side and rib cage on the fire side). let marinade several hours.
