Gimme a quick gas BBQ overview.. I've only ever cooked with charcoal..

My complex just installed 2 super-nice chrome gas BBQ grills with multiple burners in my pool area and I wanna grill tonight..

I've only ever cooked with charcoal, though.

Anything different I gotta do with gas? I can light a gas grill np.. but do I leave it running for 10-15 minutes (like charcoal) so the grill gets hot before I put stuff on it?

I'm planning on grilling some mahi mahi and some chicken.. gimme some good recipes if you got them. Otherwise it's my typical cooking improv (which is usually pretty damn good anyway.)

It is almost exactly like grilling with charcoal. Get it started, let it heat the grill up as hot as you can get it, throw on the food, wait, flip, wait, eat.

I guess you do have one extra step: shut off grill. But then you lose a step: clean up ashes.

Just like with charcoal, you'll have hotter regions and cooler regions. Place your food there appropriately.
