Isn't the bios for this MB supposed to be one with the new GUI, rather than the old text only bios?

Gigabyte has so far stayed with the text based bios setup for now as they said its easier for people as it is more familiar

It seems Gigabyte was gambling on users who wanted a GUI would rather use it in windows.
(Which is probably where we're headed for in the future anyway)

So they are pushing their Touch Bios software which despite the name can also be navigated with a mouse.

Rather than being just a tweaking utility like most software that comes with other boards, Touch BIOS is essentially your BIOS in Windows, and not just your BCLK / Multiplier / Core Voltage, but everything that's in the BIOS.

So if you want a bios GUI, you'll need to use Touch Bios software.

I havent personally used it or seen it besides screenshots since i dont own a newer Gigabyte board, but reading Gigabyte owners comments, they seem to think its great.

I just DL'd and installed TouchBIOS. It indeed does have EVERY setting duplicated in an attractive GUI.

Yeah, its the best of both worlds.

I have an ASRock z68 Extreme4 and an ASUS P8Z68-V PRO here and even though they both have nice UEFI's and good software utilities, i'd LOVE to have access to the full bios on my desktop also.

I honestly dont know why reviews down Gigabyte so much for the decision, i guess cuz a fancy UEFI is the current rage.

No doubt we'll all be tweaking our entire bios/UEFI at the desktop in the near future.
You Gigabyte owners just get to do it now.

I just got this board not too long ago, and really apreciate Gigabyte using the old style bios. I just don't see the point of the fancy uefi, except for the 3TB+ drive support which is supported by the UD4 anyway. The Touch Bios software is a nice bonus, although it could use a little bit of polish imo. At least it has all the normal bios options, it makes making minor adjustments much less tedious.
