This might be a dumb question, but is there any way to modify a ghost image file? Like remove individual files without recreating the whole image.

I've heard there are options to mount images such that you can browse them and presumably pull out something you want.
 
It might be possible in the newer version of Ghost, but impossible to do in v7 (the Ghost version I'm running).

It's been possible for a while IIRC, you should be able to use Ghost Explorer to add/remove files from at least FAT images, not sure about NTFS.
