Ghost question: OS in separate partition from apps?

Running Win2k Pro, and have Ghost 2001 and had OS, apps, imagefiles and data partitions. Got to thinking and changed things to OS_apps, Data and Imagefiles, but now I'm told that it's a hassle to do that and I should really have things like I did originally. I'm only 2 weeks into things and can change back with maybe a couple hours work. The reasoning is that if you install an app or two since your last image of your OS partition, and you want to restore that image all you have to do is restore your OS image and then reinstall those last couple of apps and you are fine. With this scenario your backups of your OS partition are quicker than if you have your apps in there too. Is THIS the best way?
 
Whenever i use ghost, i make an image of my whole drive with all the apps i care about.
I Ghost with the following in place:

Windows 2000 + Service Pack 2
Latest Video and Audio drivers.
Printer installed
Microsoft Office XP installed
Adobe Photoshop installed
VirusScan installed
CDSoftware installed and running - Winzip - WinRar and AcDsee




Absolutely NO games or useless utils...
