Getting a whole beef tenderloin really is great

Wanted to make some beef wellington this weekend. Alton Brown had a two part series on dealing with an entire beef tenderloin, it's old but google "tender is the loin" and you'll find it or search on youtube.

WOW! There is so much wonderful meat, the stuff I got at Costco was 9 bucks a pound. All you have to do is easily cut the whole loin into whatever you want. Sure some trimming is involved but there is very little waste.

So if you like da beef, look into getting a whole tenderloin for some good eats for cheap.

I saw that episode. I want to try to make it but it's just too much meat unless I'm throwing a party. Sliced beef tenderloin is only $10.99/lb and 2-3lbs is plenty for us.

The wellington roast was probably 4 good sized servings. I cut another piece for a roast about 4 servings. From there I got 6 nice filets at 1.5". Cooked some of the "chain" for steak-n-eggs for our brunch and there's plenty left of that.

All in all I'd say I got close to 20 servings for 75 bucks. Will do again. It was choice beef but still great flavor.

Naustica - that's a pretty good price and what our butcher offers but I haven't been as pleased with the meat from the butcher as I was with this, and I trust/love my butcher.

if you cut it fresh, wrap it in Butchers paper its stilld amn good when you thaw it out.

With the cost of gas today why go to Costco every time you want to have filet, not to mention the time involved?

I buy a whole tenderloin about every 2 months from Costco, trim it up and slice it, vacuum seal 2 filets in each package and freeze them. Vacuum sealed filets don't lose any of their flavor when frozen and it's convenient not to have to go to the store every time I feel like serving them. Plus I can control the thickness and precision of the cut to my liking. Also you get a couple of pounds of the butt end as leftovers from trimming, which can be used for a great variety of dishes ranging from fajitas to minute steaks to stews. Overall, it's cheaper as well, not to mention that you're usually not getting the center cut portions of the filets when you buy them packaged at Costco. There are two to four filet portions, depending on thickness of your cut, that you usually won't see in a store package and it's the best part of the tenderloin.

Just watched the Alton Brown special... Man that makes me want to go out and get some Tenderloin and cook it like that!!

I watched that episode on my DVR yesterday. Thinking of picking one of those up the next time I'm at Sam's Club.
