Isn't spinning it out the same thing as letting it soak into paper towels before you consume it to take off the grease?

Uhh no. The oil is just a vessel to transfer heat into the food and cook it. Frying oil provides minimal flavor but it does add a lot of texture in the form of crust.

I'll say it again - when done correctly fried food has very little fat.

Fried foods should be seasoned well before they are fried - that provides the flavor.

Cooking 101.
