YEah man that's a LOT of spice... I grew some Ceyenne chili pepper this past summer and I still have a bunch of dried pods. I put ONE of them in a stew for 4 people and it comes out hot!

wuss...come talk to me when you put habenero sauce on your eggs in the morning 😛

Garlic is used a lot in ASIAN cuisine.

It's North American Chinese food so, spelling could have been meesed up depending on which phonetic translation was used, Cantonese or Mandarin.

They have cooked me "authentic" chinese food quite a few times, I'm not sure what cuisine type it was (I understand there are like 8 different types?), for the most part I wasn't a huge fan. They used a lot of fish that just tasted fishy, no real flavor except the sauces which were always very good.
If it wasn't fish it was a all vegetarian dish, which I have to eat about 6 lbs of to feel full.

I'm American, give me beef, pork and chicken!!!

They were great cooks, owned a successful restaurant and all. I like some of the food, but most was just not to my liking.

Here is another little tip, most traditional chinese food is bland and lacks high quality ingredients due to the traditional low income of chinese families.
Not saying chinese food sucks, but if you took two chefs, one top notch and one just run of the mill, and told them to cook something with EXACTLY the same ingredients using the same methods, they won't taste too terribly different. It's just not my cup of tea.

I don't know if I agree with that....there's food cooked for everyday eating, and then there's the fancy stuff cooked in restaurants.

when we eat in food chinese restaurants, we always get the good stuff. We see that most Americans don't know how to order and order the crap that we wouldn't touch.

when you say most tradional chinese food is bland and lacks high quality ingredients, which dishes are you talking about. because even the poor in china eat in good restaurants sometimes, and when they do, they order the good stuff.

that's like saying most american food is crap because all people eat is PB&J, which is not true...they may eat that crap everyday at home, but when they go to restaurants, they order the good stuff like steak and lobster...

anyways, I may have misread you, so don't mind me. I just really like Chinese food 😛

I don't know the dish names, nor do I know if I could pronounce them. I guess I had a taste of the typical pauper foods and some of the higher end foods when they were entertaining important guests. Some was great, but most of the everyday chinese dishes were just bland to me. White rice, CONSTANTLY. Eventually just adding some sauce to your rice does nothing for me, it's still rice. Also the gelatin type texture didn't agree with me too much.
A lot of what I would eat at their house would be run of the mill down home chinese cooking that they ate on a daily basis because they weren't always entertaining and I was way beyond being a guest. I guess if I had to break it down it would be "rice n veggies rice n veggies rice n veggies scrap of meat rice n veggies rice and veggies dumpling dumpling dumpling soup soup rice n veggies. 😀

Also, there arn't many "traditional" ethnic american foods. Traditional American and traditional Chinese are not truly comparable. Though when you speak of what the general American eats as compared to the general Chinese person eats, the American will typically eat more expensive meat products on a daily basis.

Either way I wouldn't refuse a traditional chinese chef cooking for me.

I was in Beijing last summer. The authentic Chinese food, cooked by people who are able to make a living selling Chinese food to Chinese, is delicious.

There's lots of fish and none of it tasted fishy in the slightest, because all restaurants, even dirty and cheap ones, have fresh fish tanks. There were all the meats you would find in American Chinese food, plus God knows how many others. After a while, you learn to stop worrying about what part of the animal you're eating.

The quality across the board was just so much higher than any Chinese food I've eaten in the states -- probably because the cooks who are able to make a living in China with restaurants are actually good at it, and there is fresh and cheap produce and meat available.

What part of China then? Taste is highly geographical, southern cuisine like Canton (yes I used the old name, bite me) are stronger in taste than say Hunan. Fukien is probably sweeter, Peking is probably bland for you.
