One of my friends family is straight off the boat from China, he is first generation American.
They have cooked me "authentic" chinese food quite a few times, I'm not sure what cuisine type it was (I understand there are like 8 different types?), for the most part I wasn't a huge fan. They used a lot of fish that just tasted fishy, no real flavor except the sauces which were always very good.
If it wasn't fish it was a all vegetarian dish, which I have to eat about 6 lbs of to feel full.
I'm American, give me beef, pork and chicken!!!

They were great cooks, owned a successful restaurant and all. I like some of the food, but most was just not to my liking.
Here is another little tip, most traditional chinese food is bland and lacks high quality ingredients due to the traditional low income of chinese families.
Not saying chinese food sucks, but if you took two chefs, one top notch and one just run of the mill, and told them to cook something with EXACTLY the same ingredients using the same methods, they won't taste too terribly different. It's just not my cup of tea.
I don't know if I agree with that....there's food cooked for everyday eating, and then there's the fancy stuff cooked in restaurants.
when we eat in food chinese restaurants, we always get the good stuff. We see that most Americans don't know how to order and order the crap that we wouldn't touch.
when you say most tradional chinese food is bland and lacks high quality ingredients, which dishes are you talking about. because even the poor in china eat in good restaurants sometimes, and when they do, they order the good stuff.
that's like saying most american food is crap because all people eat is PB&J, which is not true...they may eat that crap everyday at home, but when they go to restaurants, they order the good stuff like steak and lobster...
anyways, I may have misread you, so don't mind me. I just really like Chinese food
