I remember having a nifty little program 4+ years ago that was called Cheese-O-Matic or something close to that.
You basically start it up, select from a list of running programs, and enter the current value and click on the scan button. Then you would go back to the game and change the value. Then update the new value in the memory scanner program and perform another scan.
After about 4-5 scans, the program is able to lock onto the memory location where the value is held and could set it to a different value (and even lock it at this value).
Did not work for every game, but had a decent chance to. Usually used it to modify cash (or the equivalent) in games.
