General Elder Scrolls game question (Oblivion/Morrowind/etc.)

So I played a bit of both Morrowind/Oblivion and now I'm restarting Oblivion after getting a feel for the game and shelving it for a bit. All I want to know is can I have 1 character do everything? That is, if I'm playing a spell caster and I, in effect, maximize his spellcasting abilities, can I then work on rogue abilites (blade/stealth/etc.) and maximize those as well before continuing to a warrior type build? Or must I realistically create a new character for each class type?
 
You can't really manage to be good at everything unless you want to play for a long time, you can fairly easily manage to be good in 2 classes, but 3 would require a lot of time and effort I think.
 
Like Lonyo said, you can do it, it would just take forever because you'd have to skill up on non-primary skills. There are flaws in the system that will allow you to level skills quickly, however. I originally planned on sitting down and knocking out EVERY SINGLE quest. Then I realized I'd like to see the sun sometime over the next 6 months instead. I decided to neglect all magic (well, I was kicked out of the Mage's Guild for stealing anyway). I did all of the Fighters Guild, Dark Brotherhood, Black Hand, all but 2 of the Thieves Guild quests, and of course, all of the main storyline. I did of course, at random, select a few side quests here and there from various towns.

I finished the game with nearly 80 hours played. It's rare I finish a game nowadays but Oblivion was definitely worth it.
