Gaming Keyboard and Mouse (cordless)

Sorry, I'm not a fan of wireless for gaming at all... Too heavy is my main complaint, then you have to talk about response times and battery life.

Of the options you gave, I'd prefer the g5 and a nice wired keyboard. That reduces the complexity of your system and gives you the optimal response times. Plus, no battery life issues and you save some money. g11 keyboard is one to look at too.
 
oh, other companies too... Razer for the mouse, Microsoft IntelliMouse 3.0, Saitek Eclipse keyboard.... hrmm... thats all I can think of right now.
 
I've used wireless keyboards in the past for gaming and it has shown me that wired keyboards are the way to go. Wireless mice work fine for me. I use an MX1000 still (many buttons) and recently picked up a func 1030 mouse pad because the mouse started acting up when used directly on the table and a Logitech elite wired keyboard. G7 is a solid wireless mouse but I stopped using it when I started missing the second (and third) thumb buttons.

You're better off buying keyboard and mouse separately so you can find what keyboard and mouse feels 'right' when you use it. Everyone likes different feedback from the keys in their keyboards and different shapes and features for their mouse that a combo may not fulfill.
