Don't get 2 7950GTs. Get a single 8800GTS or even better, 8800GTX, which will outperform them without the hassles of SLI.

500 watts is enough, but make sure you get one with good amperages too. Something with 18A on multiple rails, or 30A+ on a single rail would be good. The Corsair 520HX seems to be a forum favorite, have a look at that.

Like Trevante said: get a quality power supply like the one he mentioned and make sure it has enough juice on the 12V rail. If so, 500W should be enough.

About the X2 6000+...it's roughly the same in performance as a E6600 at stock speeds.

So if you are not planning on overclocking, either would do the job equally well.

If you do plan to overclock, there's no contest, and you should get a C2D, seeing as to how it's quite easy to get even a E6400 to 3.0GHz, and at that speed it would crush anything AMD has in the market at the moment.
