GA-EX58-UD3R Rackmountable?

I'm building a small vmware esxi server. Has anyone had any experience fitting that motherboard into a rackmount case? I also need to fit an Intel Pro 1000 GT into it. Preferably 1u

Any standard atx board fits in 1U cases that support standard ATX. As long as the board doesn't have absurdly tall heatsinks on it. (Think eVGA overclocking boards) Nothing can be taller than the height of the IO shield pretty much.
You're going to need to steal/rob/salvage a PCI riser or PCI-E x1 riser (depending on which interface that 1000GT is on).

I'm guessing you already know that you can generally only fit one expansion card in a normal 1U case? (I've seen some creative jerry rigging with flexible expansion cables to run more than one expansion card) So, you're going headless. (dunno vmware stuff)

so, I've done some more research and opted to switch to a different motherboard. had I gone with the GA-EX58-UD3R I would have needed to find a gpu of some sort that would fit... although supermicro did have some 1u cases that fit a low profile and a full which could be another option since I may need a sep. io controller... at this point it looks like I need 2 io controllers no matter what I do. GPU/NIC/IO controller

Is any of this mission-critical? If so you want ECC memory. That means xeon or opteron and ECC dimms. Forget the i7.

Is 8 gigs really enough memory for the VM's you're hosting? Also, if you're going with an LGA1366 CPU (xeon 3500 series in this case), you'll want to get DIMMs in multiples of 3, for performance reasons (that means 3, 6, 12, or 24 gigs of memory). If you're positive that 8 gigs if enough, you could save some cash by going with a xeon 3400 series and LGA1156 board, and getting 2 or 4 ECC dimms.

Do you need 2 IO controllers, or just two NICs? There's plenty of 1U boards with two NICs, such as the supermicro you linked.
