Short version...I can run my entire system at [207 Mhz FSB x 7.5] = 1552 Mhz- OR [201 Mhz FSB x 8] = 1603 Mhz

Does the extra 50 mhz make up for 6 FSB and 7 mhz to the memory? This is DDR, so 414 / 402 FSB..I get higher scores in Sisoft Sandra and PCMark2002 with the higher CPU speed, but i'm pretty sure those tests exclusively use CPU MHZ instead of front side bus speed..This is with memory at CL2..at 201 Mhz memory score is about 2650/2550 and 207, score is about 2750/2590.

Any feedback is appreciated :)

You are not going to see any real-world speed difference either way, so I wouldn't worry about it. But if you want to maximize your artificial benchmarks I would pick 201x8 myself. :) Try 3DMark2001SE and see which setup provides a better score.
