So I have rig oc'd. I am going to go from 4gb to 8gb. Traditionally how does this effect the stability of the oc? What should I do to the the stability? Back off the oc a bit? More V to ram?

What should I be on the look out for?

If you're talking about the system in your sig. You will have no problems. At 356 fsb you're running at ddr2 712. Just make sure your fsb to dram ratio is set to 1 to 1

Quick heads up - I tried going from two 2GB sticks of Corsair XMS2 to four sticks on my P5E, and it would not post, no matter what voltage or speed/ratio I tried. This was even at stock speeds (333FSB). Multiple calls to Corsair did not come up with a solution. Could be a one-off problem with my P5E, but just thought you should know, since you're running the same ram and motherboard.

TBH that sounds like a bad mobo, did you pursue it with Asus?

Could be because you haven't increased your north bridge voltage. When I went from 4 gb to 8 gb on my P35, I had exactly the same issue. I have increased the voltage from 1.3 V to 1.42 V and everything went back to normal, with my oc and everything ( I had an E7200 at 3.9 ghz back then).
When you fill all the motherboard memory slots, you add an extra stress on the NB and increasing the voltage makes it stable again.

I did try increasing the northbridge voltage, but it just wouldn't POST, even at 333 FSB, 1:1 (i.e., ram underclocked at 667). I figured it was a glitch with the Asus board, but not important enough for me to pursue.

Just something for the OP to keep in mind - might want to plan on applying error8's advice as a start, and hopefully it will work for you.
